Apricot and peacan granola

A crunchy, golden granola with the perfect balance of sweet and savory flavors. This version features oats, nuts and dried fruits, all baked to perfection for a wholesome snack or breakfast topping.

Recipe

Ingredients:

  • 2 cups rolled oats
  • ½ cup pecans
  • ½ cup dried apricots 
  • ½ cup unsweetened shredded coconut 
  • ¼ cup maple syrup
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • Pinch of salt

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix the Dry Ingredients:
    In a large bowl, combine the oats, pecans, shredded coconut, dried apricots, cinnamon, and salt.
  3. Add Wet Ingredients:
    In a small bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract. Pour this mixture over the dry ingredients and stir until everything is evenly coated.
  4. Spread and Bake:
    Spread the granola mixture evenly onto the prepared baking sheet. Bake for 25-30 minutes, stirring halfway through, until golden and crispy.
  5. Cool :
    Once baked, remove the granola from the oven and let it cool completely. 
  6. Store and Enjoy:
    Store the granola in an airtight container for up to 2 weeks. 

serving suggestion

This granola goes perfectly with chopped dried figs, fresh peach slices, and a dollop of your favourite plant-based yogurt. A splash of maple syrup ties it all together, adding a touch of sweetness to the crunchy, creamy, and fruity layers.
